Festive cranberry cheesecake cookie bars with a delicious cranberry and white chocolate cookie crust.
Ingredients:
  • 1 cup brown sugar
  • 0.5 cup butter, softened
  • 1 large egg
  • 1 teaspoon almond extract
  • 0.75 cup white chocolate chips
  • 0.5 cup dried cranberries
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon lemon zest
  • 1 (12 ounce) jar cherry preserves
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Cream smooth brown sugar and butter in a bowl with an electric mixer. Incorporate 1 egg, 1 teaspoon vanilla extract, and almond extract until mixed. Combine flour and salt with the creamed mixture and fold in white chocolate chips and dried cranberries. Press mixture into the baking dish.
  • In a bowl, use an electric mixer to blend together sweetened condensed milk and cream cheese until smooth. Mix in 2 eggs, lemon zest, and 1 teaspoon vanilla extract until well combined. Evenly spread the cream cheese mixture over the crust.
  • Stir cherry preserves in a small bowl until smooth. Spoon dollops of cherry preserves over the layer of cream cheese mixture. Use a knife to gently swirl through the cream cheese for a decorative pattern.
  • Bake the cheesecake in the preheated oven for 35 to 40 minutes until lightly browned and the crust pulls away from the sides of the dish. Let it cool and refrigerate for at least 1 hour before serving.
