Pumpkin muffins bursting with white chocolate chips and dried cranberries for a vibrant and delicious treat.
Ingredients:
  • 3.5 cups all-purpose flour
  • 3 cups white sugar
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon allspice
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups pumpkin puree
  • 2 cups orange juice
  • 2 teaspoons vanilla extract
  • 1 cup white chocolate chips
  • 1 cup dried cranberries
  • 1 cup brown sugar, for topping
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare 3 muffin pans by greasing or lining them with muffin wrappers.
  • In a bowl, combine flour, white sugar, salt, baking soda, and allspice. In a separate large bowl, whisk together eggs. Add vegetable oil, pumpkin, orange juice, and vanilla extract to the eggs, whisk until smooth. Stir in the flour mixture until just combined, then fold in white chocolate chips and cranberries. Fill the muffin cups with the batter and sprinkle each muffin with brown sugar before baking.
  • Bake in the preheated oven for about 25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
