Easy, tender and chewy white chocolate cranberry oatmeal cookies perfect for holiday parties and cookie exchanges!
Ingredients:
  • 0.66666668653488 cup butter, softened
  • 0.66666668653488 cup packed brown sugar
  • 2 large eggs
  • 1.5 cups rolled oats
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.25 cups dried cranberries
  • 0.66666668653488 cup coarsely chopped white chocolate
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • Using an electric mixer, cream together butter and sugar in a large bowl until fluffy; add eggs one at a time. In another bowl, combine oats, flour, baking soda, and salt. Gradually mix dry ingredients into the butter mixture, followed by dried cranberries and white chocolate.
  • Spoon dollops of dough 2 inches apart onto ungreased baking sheets.
  • Bake in the preheated oven until the edges are golden, for about 10 to 12 minutes. Let it cool briefly on the baking sheet before transferring to a wire rack to cool completely.
