Indulgent chocolate creme brulee for 8, a decadent twist on a classic favorite. Perfect for entertaining!
Ingredients:
  • 4 cups heavy whipping cream
  • 1 vanilla bean, split in half lengthwise
  • 8 egg yolks
  • 0.75 cup white sugar
  • 2 tablespoons white sugar
  • 0.5 cup cocoa powder
  • 0.5 cup brown sugar, divided
Instructions:
  • Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius).
  • In a saucepan over medium heat, warm the heavy cream, vanilla bean, and salt until the cream shimmers on the surface, approximately 5 minutes. Remove from heat and discard the vanilla bean.
  • In a large bowl, vigorously whisk together egg yolks, 3/4 cup plus 2 tablespoons white sugar, and cocoa until smooth. Gradually pour hot cream over the mixture while stirring constantly until the custard is velvety. Strain the custard into a large glass measuring cup.
  • Place eight 6-ounce ramekins in a roasting pan and fill them with custard. Add warm water to the pan, reaching halfway up the sides of the ramekins. Loosely cover the pan with aluminum foil.
  • Bake in the preheated oven until the custard is set around the edges but still slightly jiggly in the center, for about 1 hour. Allow it to cool to room temperature for another hour after removing from the oven.
  • Chill the ramekins by covering them with plastic wrap and refrigerating for around 3 hours.
  • Position the oven rack 6 inches away from the heat source and preheat the broiler.
  • Take the ramekins out of the refrigerator and pat dry any liquid on the surface with a paper towel. Place the ramekins on a baking sheet and generously sprinkle 1 tablespoon of brown sugar over each custard, ensuring it covers the entire surface.
  • Place in the preheated oven on broil until the sugar is melted and crisp, for about 30 seconds to 2 minutes. Allow it to cool briefly for around 5 minutes before serving.
