Decadent chocolate cupcakes with a luscious Oreo cream cheese frosting.
Ingredients:
  • 1.3333333730698 cups all-purpose flour
  • 0.66666668653488 cup cocoa powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon instant espresso powder
  • 0.5 teaspoon ground cinnamon
  • 1.3333333730698 cups white sugar
  • 0.66666668653488 cup brown sugar
  • 4 eggs
  • 0.33333334326744 cup water
  • 1 cup sour cream
  • 0.25 cup vegetable oil
  • 1 (8 ounce) package cream cheese, at room temperature
  • 7 tablespoons butter, at room temperature
  • 3 cups confectioners' sugar
  • 18 chocolate sandwich cookies (such as Oreo®)
  • 2 tablespoons milk, or more as needed
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C), then prepare two 12-cup muffin tins by greasing them or lining the cups with paper liners.
  • In a bowl, combine flour, cocoa powder, baking soda, baking powder, espresso powder, cinnamon, and salt. Add white sugar and brown sugar, then mix well with a whisk.
  • In a separate bowl, whisk together eggs, water, and vanilla extract. Mix in sour cream and oil until smooth. Combine egg mixture with flour mixture until fully incorporated. Fill muffin cups 3/4 full with the batter.
  • Bake in the preheated oven for 18 to 20 minutes until the tops spring back when lightly pressed. Let cool in the tins for 5 minutes, then transfer to a wire rack to cool completely, about 20 minutes.
  • In a stand mixer bowl, combine cream cheese and butter and mix until smooth. Add vanilla extract, then confectioners' sugar, mixing on medium-low until firm, about 2 to 5 minutes. Adjust consistency by adding milk one tablespoon at a time.
  • Pulse whole cookies in a food processor to create crumbs. Gently fold cookie crumbs into frosting with a rubber spatula. Refrigerate frosting for 15 minutes before piping onto cooled cupcakes.
