Decadent chocolate chip banana bread cupcakes with buttery cream cheese frosting.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.5 cup white sugar
  • 6 tablespoons lightly packed brown sugar
  • 0.25 cup unsalted butter, softened
  • 2 ripe bananas, mashed
  • 0.33333334326744 cup buttermilk
  • 0.5 cup chocolate chips, or to taste
  • 1 (3 ounce) package cream cheese, softened
  • 3 tablespoons butter, softened
  • 2 cups confectioners' sugar, or more to taste
Instructions:
  • Preheat your oven to a perfect 350 degrees F (175 degrees C) and prepare your muffin tin with paper liners.
  • Combine the flour, baking soda, baking powder, and salt in a bowl and whisk together.
  • In a separate bowl, cream together white sugar, brown sugar, and 1/4 cup of butter using an electric mixer until smooth. Add the egg, mashed bananas, and gradually mix in the flour mixture in 3 parts, alternating with buttermilk. Lastly, gently fold in the chocolate chips.
  • Using a large spoon, transfer the batter into the muffin tin that has been greased or lined.
  • Bake in the oven until a toothpick comes out clean, around 20 minutes. Then, cool the cupcakes on a wire rack for about 30 minutes.
  • Cream together cream cheese and 3 tablespoons butter until smooth. Mix in vanilla extract, then gradually beat in confectioners' sugar until frosting is silky smooth.
  • Generously ice cupcakes with frosting.
