Decadent dark chocolate cupcakes for a mood boost.
Ingredients:
  • 100g dark chocolate
  • 250ml water
  • 125g butter, softened
  • 255g brown sugar
  • 225g self-raising flour
  • 125.00 ml (75) plain flour
  • 30g cocoa powder
  • 300g dark chocolate
  • 300g sour cream
Instructions:
  • Preheat your oven to 160°C. Prepare 18 muffin pans with 1/3 cup (80ml) capacity by lining them with paper cases.
  • In a small saucepan, melt the chocolate with water over low heat. Stir constantly for 5 minutes until smooth. Take off the heat and let it cool.
  • With an electric mixer, cream the butter and sugar until light and fluffy. Gradually add the eggs one at a time, ensuring each is well incorporated. Gently mix in the flours and cocoa powder until just combined, then fold in the melted chocolate. Divide the batter evenly into lined muffin pans and bake for 20 minutes at the preset oven temperature. Once baked, transfer the muffins to a wire rack to cool.
  • Create a velvety chocolate sour cream ganache by melting chocolate and sour cream in a heatproof bowl set over simmering water. Stir constantly for 5 minutes until smooth and glossy. Spread generously over each cake and allow it to set.
