Chocolate Espresso and Cream Cake Pops

Impress loved ones with Chocolate Espresso Cream Cake Pops made with Betty Crocker™ triple chocolate cake, candy melts, and whipped cream frosting.
Ingredients:
  • 2 tablespoons instant espresso coffee powder or granules
  • 1 1/3 cups water
  • 1 box Betty Crocker™ Delights Super Moist™ Triple Chocolate Fudge Cake Mix
  • 1/2 cup vegetable oil
  • 1 tub (12 oz) Betty Crocker™ Whipped Whipped Cream Frosting
  • 1 bag (14 oz) red candy melts or coating wafers
  • 1 bag (14 oz) white candy melts or coating wafers
  • 1 teaspoon shortening
  • 40 paper lollipop sticks
  • Betty Crocker™ Decorating Decors candy sprinkles
  • Betty Crocker™ red sugar
  • 1 large block white plastic foam
Instructions:
  • Preheat oven to 350°F and grease a 13x9-inch pan with shortening or cooking spray. Dissolve coffee powder in water in a small bowl. Follow the instructions on the cake mix box, substituting the coffee mixture for water and using oil and eggs as directed. Allow the cake to cool completely in the pan on a cooling rack.
  • Prepare the cookie sheet by lining it with waxed paper. Crumble the cake with your fingers into a large bowl. Add the frosting and mix well with your hands until a dough forms. Roll the dough into firm tablespoon-sized balls and place them on the cookie sheet. Allow them to freeze for about 15 minutes.
  • Microwave red candy melts according to package instructions in a bowl. Stir in 1/2 teaspoon of shortening until smooth and slightly runny. Repeat the same process with white candy melts and the other 1/2 teaspoon of shortening.
  • Take the cake balls out of the freezer. Dip half of a lollipop stick into the melted candy and insert it halfway into a cake ball. Arrange them on a lined cookie sheet. Dip the cake balls into either red or white melted candy until fully coated, then decorate with sprinkles, red sugar, or a contrasting color. Insert the sticks into a foam block and allow them to set. Store at room temperature.
