Chocolate freckle blondies

White chocolate blondies with nostalgic freckles.
Ingredients:
  • 8.80 gm vanilla extract
  • 53.75 gm caster sugar
  • 4 eggs
  • 125g butter, chopped
  • 500.00 ml plain flour
  • 350g white chocolate, coarsely chopped
  • Freckles, to serve
Instructions:
  • Preheat your oven to 160C (140C fan forced) and lightly grease a 23cm square slab pan. Line the pan with baking paper, leaving the edges to hang over the sides.
  • Melt butter and 200g chocolate in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon until smooth. Let it cool for a bit.
  • Combine the eggs and vanilla extract with the chocolate mixture, ensuring they are fully incorporated. Add the sugar and mix well.
  • Sift the flour into a large bowl, then mix in the chocolate mixture and 100g of the remaining chocolate. Transfer the batter into the prepared pan. Bake for 35-40 minutes, or until a skewer inserted into the center comes out with a few moist crumbs. Allow to cool in the pan.
  • Drizzle the remaining 50g of melted chocolate over the blondie, add rows of freckles, then remove from the pan and cut into 18 pieces to serve.
