Thumbprint cookies, topped with a colorful chocolate freckle for a personal twist.
Ingredients:
  • 180g unsalted butter, softened
  • 220g (1 cup) caster sugar
  • 1 egg
  • 75g (1/2 cup) self-raising flour
  • 375.00 ml plain flour
  • Chocolate freckles, to decorate
Instructions:
  • Preheat your oven to 180°C and line a baking tray with non-stick baking paper.
  • In the bowl of an electric mixer, combine butter and sugar and beat until pale and creamy. Add the egg and beat well.
  • Combine the flours to form the dough. Roll 2 tablespoons of dough into a ball, flatten on the baking tray, then create a hole in the center using your thumb (avoid going through). Repeat for the remaining dough.
  • Place a rich chocolate freckle into every indentation, then bake until perfectly golden brown, around 10-12 minutes.
  • Allow to cool on wire racks.
