Indulge in these irresistible Thumbprint Cookies, bursting with your choice of apricot, raspberry, or mint jelly. Perfectly balanced shortbread dough, rolled in almonds for a delightful texture. A timeless recipe tested to perfection, reminiscent of grandma's baking.
Ingredients:
1/4 cup packed brown sugar
1/4 cupshortening
1/4 cupbutter or margarine, softened
1/2 teaspoonvanilla
1egg, separated
1cupGold Medal™ all-purpose flour
1/4 teaspoonsalt
3/4 cupfinely choppednuts
Jelly
Instructions:
Preheat the oven to 350°F.
In a medium bowl, combine brown sugar, shortening, butter, vanilla, and egg yolk. Mix in flour and salt until dough is formed.
Roll the dough into 1-inch balls, lightly beat the egg white, dip each ball in the egg white, coat in nuts, place them spaced 1 inch apart on an ungreased cookie sheet, and press your thumb deeply into the center of each ball.
Bake for around 10 minutes until lightly browned. Transfer immediately from the baking sheet to a wire rack. Allow to cool completely for about 30 minutes, then fill the thumbprints with jelly.
