Indulge in these irresistible Thumbprint Cookies, bursting with your choice of apricot, raspberry, or mint jelly. Perfectly balanced shortbread dough, rolled in almonds for a delightful texture. A timeless recipe tested to perfection, reminiscent of grandma's baking.
Ingredients:
  • 1/4 cup packed brown sugar
  • 1/4 cup shortening
  • 1/4 cup butter or margarine, softened
  • 1/2 teaspoon vanilla
  • 1 egg, separated
  • 1 cup Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped nuts
  • Jelly
Instructions:
  • Preheat the oven to 350°F.
  • In a medium bowl, combine brown sugar, shortening, butter, vanilla, and egg yolk. Mix in flour and salt until dough is formed.
  • Roll the dough into 1-inch balls, lightly beat the egg white, dip each ball in the egg white, coat in nuts, place them spaced 1 inch apart on an ungreased cookie sheet, and press your thumb deeply into the center of each ball.
  • Bake for around 10 minutes until lightly browned. Transfer immediately from the baking sheet to a wire rack. Allow to cool completely for about 30 minutes, then fill the thumbprints with jelly.
