Customisable no-bake fridge cake with endless possibilities - add popcorn, stem ginger, marshmallows, or coconut for a fun twist.
Ingredients:
  • 200 g digestive biscuits
  • 100 g pecans
  • 110 g shelled pistachio nuts
  • 10 glacé cherries
  • 2 free-range meringue nests
  • 200 g quality dark chocolate (70%)
  • 150 g unsalted butter
  • 1 tablespoon golden syrup
Instructions:
  • Break the biscuits and chop the pecans, then combine in a large bowl with pistachios, torn cherries, and mashed meringue. Place chocolate in a heatproof bowl, add chopped butter and golden syrup, then melt gently on a double boiler or in the microwave, stirring occasionally. Combine both mixtures well. Line a container with clingfilm, leaving extra to fold over. Fill with mixture and chill until firm. Unmould, cut into slices, and store airtight for up to 5 days.
