Chocolate gingerbread biscuits recipe

Festive chocolate gingerbread, great for gifting this Christmas! Perfect for a family activity.
Ingredients:
  • 125g butter, softened
  • 110g brown sugar
  • 125ml golden syrup
  • 1 Free Range Egg, lightly whisked
  • 410g plain flour
  • 25g cocoa powder
  • 1.25 gm bicarbonate of soda
  • 7.50 gm ground ginger
  • 2.50 gm mixed spice
  • Red and green Mars M&M’s, to decorate
  • 1 Free Range Egg white*
  • 5.30 gm lemon juice
  • 240g icing sugar
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with baking paper.
  • In a bowl, cream together the butter, sugar, and golden syrup using an electric mixer until pale and creamy. Incorporate the egg until just combined. Add the flour, cocoa powder, bicarbonate of soda, ginger, and mixed spice, then mix until combined. Bring the dough together by hand on a floured surface, knead gently until smooth. Cover with plastic wrap and chill in the fridge for 30 minutes until firm.
  • On a dusted surface, gently roll out the dough to a thin 3mm disc. Use a 9cm cutter to create shapes and transfer them to the prepared trays, reshaping any excess dough. Bake for 10-12 minutes or until slightly firm. Allow to cool on the trays.
  • Combine the egg white, lemon juice, and icing sugar in a bowl, whisking until a smooth paste forms.
  • Transfer the icing to a piping bag with a 1mm plain nozzle and beautifully pipe over the biscuits. Use the icing to secure the M&M’s for decoration and allow them to set for 30 minutes.
