Christmas rocky road recipe

Elevate your rocky road with Coles gingerbread and shortbread - perfect for holiday gifts or a festive coffee pairing to end your Christmas meal!
Ingredients:
  • 200g dark chocolate, chopped
  • 100g milk chocolate, chopped
  • 20g copha or butter, chopped
  • 280g pink and white marshmallows, halved
  • 150g shortbread fingers, coarsely chopped
  • 4 x 35g pkts Gingerbread biscuits, coarsely chopped
  • 70g almond
  • 4 x 52g Cherry Ripe bars, coarsely chopped
  • Green & red Mars M&M’s/M&M’s Minis, to decorate
Instructions:
  • Prepare a 20cm x 30cm lamington pan by greasing the base and sides, then lining it with baking paper, leaving some overhang on the sides.
  • In a heatproof bowl set over a saucepan of simmering water, melt the chocolates and copha or butter together, stirring constantly until smooth, for about 5 minutes. Be sure not to let the bowl touch the water.
  • In a large bowl, mix marshmallow, shortbread, gingerbread, almonds, and Cherry Ripe. Pour in the chocolate mixture and carefully fold until blended. Transfer the mixture into the prepared pan. Top with M&M’s and M&M’s Minis. Let it sit for 1 hour to set. Cut into pieces and serve.
