Ingredients:
  • 150g good-quality dark cooking chocolate (like Plaistowe Cooking Chocolate), roughly chopped
  • 185mls (3/4 cup) thin cream
Instructions:
  • Melt chocolate and cream together in a bowl over simmering water, stirring occasionally, until smooth, about 2-3 minutes. (For microwave method, refer to tip 2).
  • Let the mixture sit at room temperature for 1 1/2 hours, whisking occasionally, until thickened and ready to spread.
