Delicious chocolate cake with surprise coconut filling.
Ingredients:
  • 1 egg white
  • 0.5 cup shortening
  • 1.75 cups white sugar
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 2 cups sifted all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.75 cup cold water
  • 0.5 cup sour cream
  • 0.25 cup white sugar
  • 1 cup flaked coconut
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 cups sifted confectioners' sugar
  • 1 tablespoon butter, softened
  • 2 tablespoons milk, or as needed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 10 inch Bundt pan by greasing and flouring it.
  • In a large bowl, cream together the shortening, 1 3/4 cups white sugar, egg yolk, and vanilla until smooth. Gradually mix in the eggs one at a time using an electric mixer. In another bowl, combine 2 cups flour, cocoa powder, baking soda, and salt. Slowly incorporate this into the egg mixture, alternating with the sour cream and water. Pour the batter into the prepared Bundt pan.
  • Using a clean bowl and beaters, whip the egg white until soft peaks form. Gradually add 1/4 cup white sugar while continuing to whip until firm peaks form. Gently fold in the coconut, 1 tablespoon of flour, and 1 teaspoon of vanilla using a spatula or wooden spoon. Drop spoonfuls of this mixture over the chocolate batter in the pan, ensuring it doesn't touch the pan's sides.
  • Bake in the preheated oven for 55 to 65 minutes or until a knife comes out clean. Let it cool in the pan for 15 minutes, then invert onto a wire rack to cool completely. Remove from pan and drizzle with vanilla glaze.
  • Prepare a luscious vanilla glaze by combining confectioners' sugar, butter, and milk in a small bowl. Gradually add milk until the glaze reaches a thick yet pourable consistency. Drizzle over the cooled cake for a delightful finish.
