Kid-friendly magical chocolate cake with rich, fudgy bottom, fluffy mousse center, and crispy top.
Ingredients:
  • 4 eggs, separated
  • 8.80 gm vanilla extract
  • 161.25 gm caster sugar
  • 125g butter, melted, cooled
  • 187.50 ml plain flour
  • 32.50 gm Dutch-processed cocoa powder
  • 193.13 gm milk
  • Pinch of cream of tartar
  • 252.50 gm thickened cream, whipped, to serve
Instructions:
  • Preheat your oven to 170C/150C fan-forced and grease a 3.5cm-deep, 18cm x 28cm slice pan.
  • With an electric mixer, whisk together egg yolks, vanilla, and sugar until thick and creamy, about 5 minutes. Slowly incorporate melted butter until fully mixed. Add flour and cocoa in two parts, mixing until combined. Slowly pour in milk while continuing to beat until the mixture is smooth and slightly runny.
  • Whip egg whites and cream of tartar until stiff peaks form using an electric mixer and a clean bowl. Gently fold half of the egg white mixture into the chocolate mixture, then fold in the rest.
  • Carefully transfer the mixture into the pan, ensuring it reaches the top. Bake for 40-45 minutes until the edges are set, but the center is slightly jiggly. Allow it to cool for 30 minutes, then refrigerate for at least 2 hours until cold. Serve with a dollop of whipped cream.
