Chocolate mandarin mousse

Decadent yet guilt-free chocolate mousse with a zesty twist from mandarin.
Ingredients:
  • 20g pkt diet chocolate mousse mix
  • 100ml fresh mandarin juice
  • 1 mandarin, rind finely grated
  • 20g dark chocolate, grated
  • 2 x 200g French vanilla lite fruche
  • 2 egg whites
  • Mandarin segments, to serve
  • Dark chocolate, grated, extra, to serve
Instructions:
  • Whisk dessert mix and mandarin juice together using a balloon whisk until thick and slightly increased in volume.
  • Incorporate mandarin zest, grated chocolate, and 1 1/2 containers of Fruche into the mixture.
  • Beat egg whites with an electric beater until soft peaks form. Gently fold them into the mousse mixture until just combined. Spoon the mixture into glasses or ramekins and refrigerate for about 1 hour until set.
  • Finish by adding a generous spoonful of the remaining Fruche, bright mandarin segments, and a sprinkle of grated chocolate on top.
