Indulgent chocolate citrus cake is sure to wow everyone!
Ingredients:
  • 3 large mandarins, unpeeled
  • 4 Free Range Eggs
  • 150g caster sugar
  • 160g almond meal
  • 75g self-raising flour
  • 35g cocoa powder
  • Greek-style yoghurt, to serve
  • 110g caster sugar
  • 2 mandarins, thinly sliced
Instructions:
  • Place mandarins in a medium saucepan and cover with cold water. Bring to a boil over high heat, then drain and repeat twice more to reduce bitterness of the mandarin peel. Set aside to cool slightly.
  • Preheat your oven to 180°C. Grease a 20cm round cake pan and line the base and sides with baking paper.
  • Take mandarins out onto a fresh work surface. Give them a rough chop, removing any seeds. Put the chopped mandarins in a food processor and blend until smooth.
  • In a bowl, use an electric mixer to beat eggs and sugar until pale and creamy. Add almond meal, flour, cocoa powder, and mandarin puree. Gently fold with a large metal spoon until just combined. Spoon mixture into a pan and bake for 50-60 mins until a skewer comes out clean. Cool in the pan.
  • Prepare the candied mandarin by lining a baking tray with parchment paper. In a small frying pan over medium-low heat, melt sugar in ¼ cup (60ml) water, stirring for 2-3 minutes until the sugar dissolves. Add the mandarin to the pan, reduce heat to low, and cook for 6-8 minutes, turning occasionally, until the mandarin is tender and the syrup thickens. Transfer the mandarin to the prepared tray and let it cool.
  • Plate the cake, garnish with candied mandarin, drizzle with the syrup from the pan, and cut into wedges for serving alongside the yogurt.
