Wholesome whole wheat chocolate chip cookies - a portable, satisfying breakfast swap for oatmeal bars.
Ingredients:
  • 4 cups quick-cooking oats
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 0.25 cup butter, room temperature
  • 2 large eggs
  • 0.5 cup applesauce
  • 2 teaspoons vanilla extract
  • 2 cups semisweet chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  • Combine oats, all-purpose flour, whole wheat flour, baking powder, salt, and baking soda in a bowl and mix well.
  • Using an electric mixer, whip up a fluffy mixture of white sugar, brown sugar, and butter in a large bowl. Add eggs, applesauce, and vanilla extract in that sequence. Gently fold in the oat-flour mixture until just combined, then mix in the chocolate chips.
  • Scoop 1/4 cup of dough onto the baking sheet and continue with the rest of the dough, gently pressing down on each cookie.
  • Bake in the preheated oven for 12 to 15 minutes until lightly browned at the edges. Allow to cool on the baking sheet for 3 to 4 minutes, then transfer the cookies to a wire rack to cool completely.
