Dark-choc whole mandarin cake

Indulgent dark chocolate cake with baked mandarin inside and a generous heap of mandarin slices on top.
Ingredients:
  • 3 large mandarins, unpeeled
  • 6 Free Range Eggs
  • 220g caster sugar
  • 175g almond meal
  • 75g self-raising flour
  • 200g 70% dark chocolate, melted
  • 6 small mandarins, peeled
  • 110g caster sugar
  • 125ml mandarin juice
  • 1 cinnamon stick or quill
  • 20.00 ml mandarin zest
Instructions:
  • In a saucepan, immerse whole mandarins in cold water. Boil over high heat, then drain and repeat. (This step helps to decrease the bitterness of the mandarin peel.)
  • Place the mandarins back in the pan and cover them with water. Bring to a boil, then lower the heat to medium and simmer for 30 minutes, or until very tender. Drain the mandarins and set them aside to cool.
  • Preheat your oven to 180°C, then generously grease and line a 22cm springform pan to prepare it for baking.
  • Chop the mandarins into large pieces, removing any seeds. Blend in a food processor until creamy.
  • Whisk eggs and sugar in a bowl using an electric mixer for 8 minutes or until the mixture doubles in size. Add mandarin puree, almond meal, and flour, then gently fold to combine. Next, fold in the chocolate until well mixed. Pour the mixture into the prepared pan and bake for 50-60 minutes or until a skewer inserted in the center comes out clean. Allow the cake to cool completely in the pan before serving.
  • For the mandarin compote, start by segmenting half of the mandarins. Then thinly slice the remaining mandarins crosswise. In a saucepan over low heat, combine sugar, mandarin juice, cinnamon, and 1/2 cup (125ml) water. Stir and cook for 5 minutes until the sugar dissolves. Increase the heat to high, bring it to a boil, and let it simmer without stirring for 3 minutes until the syrup slightly thickens. Finally, add the mandarin zest, segments, and slices, and let it cool for a bit.
  • Place the delicious cake on a beautiful serving platter, generously top it with juicy mandarin slices, and drizzle with the mouthwatering syrup.
