Chocolate chip whole wheat banana bread - kid-approved and simple.
Ingredients:
  • 0.75 cup packed brown sugar
  • 0.25 cup butter, softened
  • 1 egg
  • 3 medium very ripe bananas
  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1.25 teaspoons baking powder
  • 0.5 cup chocolate chips
Instructions:
  • Preheat the oven to a cozy 325 degrees F (165 degrees C) and generously grease a loaf pan.
  • Cream brown sugar and butter with an electric mixer until creamy. Add egg and beat until light and fluffy, about 1 to 2 minutes. Mash bananas with a fork and add to the mixture, beating just until fairly smooth (some lumps are okay).
  • In a separate bowl, mix all-purpose flour, whole wheat flour, baking soda, baking powder, and salt. Blend the dry ingredients into the banana mixture until combined. Gently fold in chocolate chips and transfer the batter into the prepared loaf pan.
  • Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 5 minutes, then invert to release the loaf onto a wire rack to continue cooling. Enjoy warm for the best taste.
