Vegan crepe-style pancakes, kid-approved. Top with bananas, syrup, and butter.
Ingredients:
  • 0.5 cup old-fashioned oatmeal
  • 0.75 cup almond milk
  • 0.5 cup almond flour
  • 1 ripe banana
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • cooking spray
Instructions:
  • 1. Blend oats into a fine powder in a blender. Add almond milk, almond flour, banana, sugar, vanilla extract, cinnamon, baking powder, and salt. Blend until smooth. Allow the batter to thicken for about 10 minutes.
  • Preheat a skillet over medium-high heat and spray with cooking spray. Pour 1/4 cup of batter onto the skillet. Cook until bubbles form and edges are dry, about 3-4 minutes. Flip and cook until golden brown, 2-3 minutes. Repeat with the rest of the batter.
