Whip up fluffy whole wheat banana pancakes for a nourishing morning boost!
Ingredients:
  • 1 cup uncooked rolled oats
  • 1 cup whole wheat flour
  • 0.75 cup all-purpose flour
  • 0.25 cup brown sugar
  • 2 tablespoons dry milk powder
  • 0.5 teaspoon baking soda
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 medium banana, mashed
  • 1 teaspoon vegetable oil, or as needed
Instructions:
  • Pulse oats in a blender until they reach a coarse flour-like texture.
  • In a bowl, combine oats, both flours, brown sugar, milk powder, baking powder, baking soda, and salt. Whisk until everything is well mixed.
  • In a separate bowl, combine milk, egg, 2 tablespoons vegetable oil, and vanilla, then mix in mashed banana. Pour this mixture into the flour mixture, stirring until just moistened. Allow batter to rest for 5 minutes.
  • Oil the griddle lightly with 1 teaspoon of oil and heat it over medium-high heat.
  • Drop spoonfuls of batter onto the hot griddle, cook until bubbles form and edges are dry (about 2 minutes), flip and cook until browned. Repeat with remaining batter.
