Wholesome oat muffins with Greek yogurt, chocolate chips, and whole wheat flour - a nutritious breakfast treat!
Ingredients:
  • 0.5 cup unsalted butter, softened
  • 0.75 cup packed brown sugar
  • 0.75 cup nonfat plain Greek yogurt
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup old-fashioned oats
  • 1 cup semi-sweet chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with paper liners.
  • In a large bowl, use an electric mixer to combine butter and brown sugar until creamy. Mix in yogurt, egg, and vanilla until smooth.
  • Combine flour, cinnamon, baking powder, baking soda, and salt in a separate bowl. Gradually incorporate this mixture into the creamed mixture until well combined. Add oats and chocolate chips, then divide the batter evenly among the 12 muffin cups, filling each at least 3/4 full.
  • Bake the muffins in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pan on a wire rack for 5 minutes, then transfer to the rack to cool completely.
