Delicious rhubarb banana pancakes for a family-friendly breakfast.
Ingredients:
  • 1.3333333730698 cups unbleached all-purpose flour
  • 10 tablespoons quick cooking oats
  • 0.33333334326744 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.3333333730698 cups nonfat milk
  • 1 teaspoon lemon juice
  • 0.5 banana, mashed
  • 1 cup finely chopped rhubarb
  • 2 tablespoons vegetable oil
Instructions:
  • In a large bowl, mix together flour, oats, brown sugar, cinnamon, baking soda, and salt. In a separate bowl, combine milk and lemon juice, then stir in banana. Fold the banana mixture into the flour mixture, and gently fold in the rhubarb.
  • Preheat a griddle or large skillet over medium heat. Spoon 1/4 cup of batter onto the griddle and cook until bubbles form and edges are dry, for approximately 2 minutes. Flip and cook until golden brown on the other side, around 2 more minutes. Repeat with the remaining batter.
