Brownie waffles with caramelised mandarin and chocolate sauce

Decadent chocolate waffles with zesty citrus topping.
Ingredients:
  • 125g Nestlé Bakers' Choice Dark Chocolate Chunks
  • 125g unsalted butter, chopped
  • 2 eggs, lightly whisked
  • 150g (1 cup) plain flour
  • 155g (3/4 cup, firmly packed) brown sugar
  • 6.00 gm baking powder
  • 80ml (1/3 cup) milk
  • Pinch of salt
  • Chocolate ice-cream, to serve
  • 215g (1 cup) caster sugar
  • 125ml (1/2 cup) water
  • 5 mandarins, peeled, sliced crossways
  • 300ml pouring cream
  • 100g Nestlé Bakers' Choice Dark Chocolate Chunks
Instructions:
  • In a saucepan over medium heat, combine sugar and water until sugar dissolves. Bring to a boil, then simmer without stirring for 15 minutes until deep caramel forms. Add mandarin, then cool and refrigerate for 4 hours or overnight to enhance flavors before serving.
  • In a heatproof bowl, microwave cream and chocolate on High in 30-second intervals, stirring until completely melted and smooth. Set aside.
  • Melt chocolate and butter together in a heatproof bowl set over simmering water, stirring with a metal spoon. After melting, remove from heat and swiftly mix in egg, flour, sugar, baking powder, milk, and salt. Transfer the mixture into a jug.
  • Heat up your waffle maker. Pour 1/2 cup of waffle batter into the center. Close the waffle maker and cook for 2-3 minutes until fully cooked. Gently use a flat-bladed knife to release the waffle. Transfer it to a plate; it will be delicate. Repeat with the rest of the batter to make a total of 6 waffles. Enjoy with compote, ice cream, and a generous drizzle of chocolate sauce.
