Decadent Chocolate Mexican Wedding Cookies.
Ingredients:
  • 1 cup butter, softened
  • 0.33333298563957 cup confectioners' sugar
  • 2 teaspoons vanilla extract
  • 1.75 cups all-purpose flour
  • 1 cup ground pecans
  • 0.5 cup German sweet chocolate, grated
  • 0.75 teaspoon ground cinnamon
  • 1 pinch salt
  • 0.5 cup confectioners' sugar
  • 0.25 cup German sweet chocolate, grated
Instructions:
  • Cream together the butter and 1/3 cup confectioner's sugar in a large bowl until light and fluffy. Stir in the vanilla extract.
  • Mix together flour, ground pecans, 1/2 cup ground chocolate, cinnamon, and salt in a separate bowl until well combined.
  • Gently mix the dry ingredients into the creamed mixture.
  • Cover the dough with plastic wrap and refrigerate for 1 to 2 hours, or until it becomes firm.
  • Heat your oven to a toasty 325 degrees F (180 degrees C).
  • Roll the dough into 1-inch balls and arrange them 1 inch apart on an ungreased baking sheet. Bake for 15 to 18 minutes, until the cookies are firm to the touch. Let them cool for 1 minute on the baking sheet before transferring to a wire rack.
  • Sift 1/2 cup of confectioner's sugar and 1/4 cup of ground cocoa into a shallow bowl. Roll warm cookies in the coating.
