Chocolate Mint Cookies I

Decadent chocolate cookies with refreshing mint icing. Simply irresistible!
Ingredients:
  • 0.75 cup butter
  • 1.5 cups packed brown sugar
  • 2 tablespoons water
  • 2 cups semisweet chocolate chips
  • 2 eggs
  • 2.5 cups all-purpose flour
  • 1.25 teaspoons baking soda
  • 0.5 teaspoon salt
  • 36 chocolate mint wafer candies
Instructions:
  • In a large pan over gentle heat, melt butter with sugar and water. Stir in chocolate chips until partially melted. Remove from heat and stir until chocolate is fully melted. Transfer to a large bowl and allow to cool for 10 minutes.
  • Beat in eggs one at a time at high speed into the chocolate mixture. Then, reduce speed to low and blend in dry ingredients until combined. Chill dough for about 1 hour.
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Form dough into balls and arrange on ungreased cookie sheet, spacing them 2 inches apart. Bake for 8-10 minutes. Unwrap mints and cut each in half while cookies bake. As soon as cookies are done, place half a mint on each cookie. Allow mint to melt for up to 5 minutes, then spread over cookie. Indulge and savor!
