Decadent chocolate cookies infused with refreshing mint flavor.
Ingredients:
  • 1.75 cups granulated sugar
  • 4 eggs
  • 4 ounces unsweetened chocolate, melted and cooled slightly
  • 0.5 cup shortening
  • 1 teaspoon peppermint extract
  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • Reynolds® Parchment Paper
Instructions:
  • In a large bowl, mix together granulated sugar, eggs, melted chocolate, shortening, baking powder, and peppermint extract. Use an electric mixer on medium speed until well combined, occasionally scraping the sides of the bowl. Slowly incorporate most of the flour with the mixer. Fold in any remaining flour using a wooden spoon.
  • Chill the dough for 2 to 24 hours until it's easy to handle.
  • Preheat the oven to 375 degrees F and line cookie sheets with Reynolds® Parchment Paper. Shape the dough into 1-inch balls, coat them in powdered sugar, and arrange them 2 inches apart on the prepared sheets.
  • Bake for around 9 minutes until the edges are lightly set. Then, move the cookies on the parchment paper to a wire rack to cool completely.
