Festive mint chocolate chip cookies inspired by Girl Scout Thin Mints® - perfect for the holidays.
Ingredients:
  • 0.75 cup packed light brown sugar
  • 1 tablespoon peppermint extract
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon salt
  • 2 cups all-purpose flour
  • 0.5 cup cocoa powder
  • 1 teaspoon baking soda
  • 1.6666667461395 cups mint chocolate chips
Instructions:
  • Preheat the oven to 375°F (190°C) to ensure the perfect cooking temperature.
  • Using an electric mixer, blend butter, white sugar, brown sugar, peppermint extract, vanilla extract, and salt until smooth and creamy. Gradually add eggs and continue mixing until well combined.
  • In a bowl, combine flour, cocoa powder, and baking soda, whisk well. Gradually add this mixture to the creamed butter, beating until well blended. Gently fold in the chocolate chips. Using rounded teaspoons, drop dough onto a baking sheet.
  • Bake at the specified temperature until cookies are firm in the center, for 8 to 10 minutes. Let cookies cool on the baking sheet for approximately 5 minutes before transferring them to a wire rack to cool completely.
