Mint-Chocolate Chip Cookie Whoopie Pies

Decadent whoopie pies: chocolate chip cookies filled with mint-infused vanilla frosting. Deliciously irresistible.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Chocolate Chip Cookie Mix
  • 1/4 cup butter, softened
  • 1 tablespoon water
  • 1 cup from 1 tub (12 oz) Betty Crocker™ Whipped Vanilla Frosting
  • 1 tablespoon pure mint extract
Instructions:
  • Preheat the oven to 375°F. Combine cookie mix, butter, and water in a medium bowl, stirring until a soft dough forms.
  • Spoon teaspoonfuls of dough onto an ungreased cookie sheet, spacing them 1 inch apart to yield 18 cookies.
  • Bake for 8 to 10 minutes, or until golden brown. Let cool for 1 minute on the cookie sheet before removing, then cool for an additional 4 minutes before assembling.
  • Combine the frosting and mint extract until well mixed. Spread a generous tablespoon of the frosting mixture on the bottom side of a cookie. Place another cookie on top, bottom sides together.
