Chocolate mint shamrock parfait

Indulge in our simple yet irresistible chocolate mint dessert with a touch of the Emerald Isle.
Ingredients:
  • 150g white chocolate, chopped
  • 1/2 tsp peppermint essence
  • 600ml ctn thickened cream
  • 90g dark chocolate, finely chopped
  • 75g white chocolate, extra, melted
  • Green sugar crystals
  • Green food colouring, to tint
  • 2 x 90g pkt Dark Chocolate Mint Tim Tams, finely chopped
  • Finely grated dark chocolate, to sprinkle
Instructions:
  • In a small saucepan over low heat, melt and stir together white chocolate, essence, and 300ml of cream until smooth. Transfer the mixture to a bowl and chill in the fridge for 2 hours.
  • While gently warming 80ml of the leftover cream in a saucepan until nearly boiling, add the dark chocolate and stir until silky. Pour the mixture into a bowl and let it cool for 20 minutes.
  • On a piece of baking paper, sketch four four-leaf clover shapes, then flip the paper. Transfer it to a baking tray. Fill a snap-lock bag with melted white chocolate, cut off one corner, and pipe chocolate onto the outlined shapes, filling the center. Sprinkle with sugar crystals. Allow to set.
  • Whip white chocolate cream mixture and remaining cream with electric beaters until soft peaks form (being careful not to overbeat to prevent curdling). Divide mixture into two portions and tint one portion pale green using food coloring.
  • In 4 serving glasses, alternate layers of green chocolate mixture, Tim Tams, white chocolate mixture, and dark chocolate mixture. Finish with Tim Tams, clovers, and a sprinkle of chocolate on top. Enjoy!
