Finish strong with a decadent chocolate treat.
Ingredients:
  • 500g dark chocolate
  • 53.60 gm golden syrup
  • 125g unsalted butter
  • 4 eggs
  • 20.00 gm caster sugar
  • 20.00 ml plain flour, sifted
  • Melted chocolate, to decorate
  • Chocolate sorbet, to serve
  • 200g mascarpone cheese
  • 40.00 ml instant coffee
  • 24.00 gm pure icing sugar
Instructions:
  • Preheat your oven to 220°C and prepare a 20cm round spring-form cake pan by greasing and lining the base with non-stick baking paper.
  • Combine the chocolate, golden syrup, and butter in a bowl set over a saucepan of simmering water until melted. Allow to cool slightly before using.
  • In the bowl of an electric mixer or using an electric hand beater, whisk eggs and sugar on high for 10 minutes until thick and pale. Carefully fold in the flour followed by the chocolate mixture until evenly mixed. Bake in the middle shelf of the oven for 12 minutes. After baking, loosen the cake edges with a knife, remove the collar, and cool in the fridge for 1 hour to set the center.
  • First, dissolve the coffee in 1 tablespoon of boiling water and allow it to cool. Then, whip together the mascarpone, coffee, and sugar in a bowl until the mixture is stiff.
  • Coat non-toxic leaves with melted chocolate. Once hardened, gently remove the leaf.
  • Serve the sliced cake with a dollop of coffee mascarpone, topped with a chocolate leaf, and a side scoop of sorbet.
