Try Chef John's beginner-friendly, egg-free chocolate mousse with rum or coffee flavors for a delectable, velvety texture.
Ingredients:
  • 3 1/2 ounces dark chocolate (62% cacao is ideal)
  • 1 tablespoon unsalted butter
  • 2 large egg yolks
  • 1 tablespoon white sugar
  • 1/4 cup water
  • 1 tiny pinch salt
  • 1/2 cup chilled heavy whipping cream
Instructions:
  • Chop the chocolate into small pieces and combine with the butter, setting aside for later use.
  • Combine egg yolks, sugar, water, and salt in a metal mixing bowl. Cook over medium-low heat, whisking continuously, until the mixture thickens and becomes hot to the touch (145 to 150 degrees F (63 to 65 degrees C)).
  • When the yolk mixture is thick and hot, add chocolate and butter. Whisk until the chocolate is completely melted. Allow it to sit on the counter for a few minutes, occasionally whisking to cool to just above room temperature. Ensure it's not warm when folding into whipped cream to avoid melting it, but don't let it cool too much to prevent it from getting too firm.
  • Whisk the cold cream until it reaches medium stiff peaks; avoid over-whisking to prevent separation and maintain a smooth texture.
  • Add a portion of the chocolate mixture to the whipped cream and gently fold with a spatula until almost combined. Gradually fold in the rest of the chocolate, being careful to preserve the airy texture.
  • Divide the mixture among 4 serving dishes, cover with wrap, and refrigerate for a minimum of 1 hour before serving.
