Indulge in exquisite white chocolate mousse for a decadent finale.
Ingredients:
  • 225g white chocolate bits
  • 70g unsalted butter, chopped
  • 300ml thickened cream
  • 57.20 gm honey
  • 220g caster sugar
  • 80ml vodka
  • 3 sheets of edible silver leaf*
Instructions:
  • Melt chocolate and butter together in a bowl set over simmering water, stirring gently until fully combined. Remove from heat.
  • Whisk cream until soft peaks form. In a separate bowl, beat eggs and honey until light and creamy. Gently fold in melted chocolate, followed by the whipped cream, keeping the mixture light and fluffy. Divide the mixture evenly into 4 serving glasses, cover, and refrigerate for at least 4 hours to set.
  • First, combine sugar and 1 cup (250ml) water in a pan and stir over low heat until the sugar dissolves. Increase heat to medium and simmer for 10 minutes. Remove from heat and allow to cool completely. Mix in vodka and transfer the mixture to a blender with the silver leaf. Blend briefly until the leaf is broken into small flakes. Before serving, top each mousse with the sparkling syrup.
