Make irresistible buckeyes: chocolate-coated peanut butter balls with graham crackers, perfect for your holiday spread.
Ingredients:
  • 1.5 cups peanut butter
  • 1 cup butter
  • 4 cups confectioners' sugar
  • 1.3333333730698 cups graham cracker crumbs
  • 2 cups semisweet chocolate chips
  • 1 tablespoon shortening
Instructions:
  • Combine peanut butter, butter (or margarine), confectioners' sugar, and graham cracker crumbs into a cohesive mixture. Form into 1-inch balls and chill in the freezer for 15-30 minutes until solidified.
  • Melt chocolate and shortening in a double boiler, stirring often and scraping the sides with a rubber spatula to prevent burning, until smooth, about 5 minutes.
  • Take out the peanut butter balls from the freezer. Dip each ball into the chocolate mixture individually, skewering the ball with a toothpick to coat all sides in chocolate. Place the coated ball on a cookie sheet or tray lined with waxed paper. Repeat with the rest of the balls.
