Decadent no-bake chocolate peanut butter bars with Passover-friendly swaps
Ingredients:
  • Peanut butter layer:
  • 1 1/4 cup of graham cracker crumbs (use toasted matzo crumbs—see recipe note—or ground Passover crispy cereal if following the Passover dietary rules)
  • 1 1/4 cup of confectioner's sugar (use Passover-friendly confectioner's sugar—see recipe note—if following Passover dietary rules)
  • 3/4 cup plus 2 tablespoons of crunchy, natural peanut butter (no added preservatives or corn syrup)
  • 8 tablespoons (4 ounces) unsalted butter, melted
  • 2 tablespoons honey
  • Chocolate topping:
  • 9 ounces semi-sweet chocolate chips (1 1/2 cups) (use Kosher chocolate chips if making for Passover)
  • 1 tablespoon butter
Instructions:
  • Line the baking pan with parchment paper or non-stick aluminum foil, leaving an overhang on at least 2 opposite sides for easy lifting once the bars are set.
  • Prepare the peanut butter mixture: Combine the crumbs and powdered sugar in a food processor, pulse until mixed. Add peanut butter, melted butter, and honey. Process until blended and dough-like. Adjust consistency with more melted butter if too dry or chill briefly if too wet after pressing into the pan.
  • Spread and smooth the peanut butter mixture on the lined pan by pressing with a flat bottomed object, like a measuring cup or saucepan, to create an even layer.
  • Create a double boiler by placing a metal bowl over gently simmering water. Add chocolate chips and butter to the bowl. Stir occasionally until the chocolate is smooth and melted.
  • Evenly coat the peanut butter layer with the melted chocolate using an offset spatula. Chill in the refrigerator for at least an hour.
  • Cut into bars: Transfer the contents from the pan onto a cutting board and slice into 36 bars measuring 1-inch by 2 1/4 inches.
