Decadent chocolate cookie with peanut butter chips made with finely ground oats.
Ingredients:
  • 2.5 cups rolled oats
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.75 cup unsalted butter, at room temperature
  • 0.25 cup peanut butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 (10 ounce) package peanut butter chips
Instructions:
  • Blend oats until they have a flour-like consistency, then combine with flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  • Cream together butter, milk, peanut butter, white sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract with the last egg, then blend in the oat mixture until fully incorporated. Gently fold in peanut butter chips until evenly distributed. Chill dough for 30 minutes before proceeding.
  • Preheat your oven to 350°F (175°C).
  • Scoop 1-inch portions of dough onto ungreased baking sheets, keeping them 2 inches apart.
  • Bake in a hot oven until the centers of the cookies are fully set, about 10 to 12 minutes.
