Indulge in a rich, nutty chocolate cake with your favorite hot beverage.
Ingredients:
  • Icing sugar mixture, to dust
  • Melted butter, to grease
  • 70g (1/2 cup) pecans
  • 4 omega-3 enriched eggs, lightly whisked
  • 100g (1/2 cup) caster sugar
  • 36.80 gm canola oil
  • 110g (2/3 cup) wholemeal self-raising flour
  • 35g (1/3 cup) cocoa powder
Instructions:
  • Preheat your oven to 170°C. Brush a 20cm round cake pan with melted butter, then line base and sides with non-stick baking paper for easy release.
  • Add the pecans to the food processor bowl and pulse until finely chopped.
  • In a large bowl, use an electric beater to whip eggs until fluffy. Gradually add sugar and beat until thick and pale. Pour in the oil and beat until just combined.
  • Simply sprinkle the flour and cocoa over the egg mixture, then mix in the husks and pecans using a metal spoon until just combined.
  • Pour the mixture into the prepared pan and bake in the oven for 35 minutes or until the surface is dry and the cake springs back when touched. Let it rest for 5 minutes, then transfer it onto a wire rack to cool. Dust with icing sugar before serving.
