Indulge in decadent jumbo coffee cakes filled with chocolate chips and pecans.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 2/3 cup milk
  • 1 egg
  • 2 tablespoons granulated sugar
  • 1 cup dark chocolate chips
  • 1/2 cup chopped pecans
  • 1/3 cup Original Bisquick™ mix
  • 1/3 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons cold butter
  • 1/4 cup chopped pecans
  • 2 tablespoons dark chocolate chips
Instructions:
  • Preheat oven to 400°F and generously coat 6 jumbo muffin cups with baking spray containing flour.
  • Combine 2 cups Bisquick mix, milk, egg, and granulated sugar in a medium bowl until smooth. Mix in 1 cup chocolate chips and 1/2 cup pecans, then portion the batter into muffin cups evenly.
  • Combine 1/3 cup Bisquick mix, brown sugar, cinnamon, and butter in a small bowl. Use a fork to mix until crumbly. Add 1/4 cup pecans and 2 tablespoons chocolate chips to the mixture. Sprinkle the topping over the batter in the cups.
  • Bake for 16 to 20 minutes until tops spring back when lightly touched. Allow to cool for 5 minutes before removing from pan to cool on a rack. Serve either warm or cool.
