Chocolate Pecan Pie

Indulge in a decadent pecan chocolate pie for a satisfying treat!
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 1/3 cup plus 1 tablespoon shortening or 1/3 cup lard
  • 2 to 3 tablespoons cold water
  • 2/3 cup sugar
  • 1/3 cup butter or margarine, melted
  • 1 cup corn syrup
  • 2 tablespoons bourbon, if desired
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup pecan halves or broken pecans
  • 1 bag (6 ounces) semisweet chocolate chips (1 cup)
Instructions:
  • Preheat oven to 375°F.
  • Combine flour and salt in a medium bowl. Use a pastry blender to cut in shortening until the mixture resembles small peas. Add cold water one tablespoon at a time, mixing with a fork until the dough is moistened and almost comes together (add 1 to 2 more teaspoons of water if needed).
  • Shape the pastry into a ball, then flatten it into a round shape on a lightly floured surface. Roll the pastry out into a circle that is 2 inches larger than the upside-down pie plate (9x1 1/4 inches). Fold the pastry into fourths, place it in the pie plate, and unfold, gently pressing it against the bottom and sides of the plate. Trim any overhanging edges to 1 inch from the rim of the pie plate, then tuck and roll the pastry under to align with the plate edge. Finally, create a decorative crust as desired.
  • In a large bowl, whisk together sugar, butter, corn syrup, bourbon, 1/2 teaspoon salt, and eggs until smooth. Gently fold in pecans and chocolate chips. Transfer the mixture into a pastry-lined pie plate. Cover the edge with foil to prevent excess browning, removing it during the last 15 minutes of baking.
  • Bake the pie for 40 to 50 minutes until it's set, then let it cool for 30 minutes. Chill in the refrigerator for about 2 hours until perfectly chilled.
