Decadent twist on classic Italian cookie with rich bittersweet chocolate for a crispy texture.
Ingredients:
  • 6 eggs
  • 1.5 cups white sugar
  • 1 cup butter, melted
  • 2 tablespoons vanilla extract
  • 3 (1 ounce) squares bittersweet chocolate (such as Baker’s®), melted
  • 3.5 cups self-rising flour
  • 0.25 cup Dutch process cocoa powder
  • 4 teaspoons baking powder
Instructions:
  • In a bowl, use an electric mixer to blend sugar and eggs until pale yellow. Mix in butter and vanilla extract until blended. Stir in chocolate until batter is smooth.
  • Combine flour, cocoa powder, baking powder, and salt in a bowl, then fold into the egg mixture until fully incorporated.
  • Preheat the pizzelle baker following the manufacturer's guidelines.
  • Spoon batter onto the hot pizzelle iron and bake until golden, about 30 to 45 seconds. Gently remove and place on a cooling rack.
