Chocolate Pudding with Marshmallows

Quick and easy chocolate pudding topped with marshmallows for a delightful dessert in 15 minutes.
Ingredients:
  • 2 eggs
  • 2 egg whites
  • 1/2 cup sugar
  • 1/3 cup baking cocoa
  • 2 tablespoons cornstarch
  • 2 cups fat-free (skim) milk
  • 1 tablespoon butter or margarine
  • 1 teaspoon vanilla
  • 1/2 cup miniature marshmallows
Instructions:
  • In a medium bowl, gently whisk together the eggs and egg whites; set aside.
  • In a 2-quart saucepan, whisk together sugar, cocoa, and cornstarch. Slowly pour in the milk while stirring. Cook over medium heat, whisking constantly until the mixture thickens and comes to a boil. Boil and continue stirring for 1 minute.
  • Pour a portion of the hot mixture into the eggs while continuously stirring, then combine everything back into the saucepan. Cook on low heat, stirring constantly, until thickened. Remove from heat and mix in the butter and vanilla.
  • Divide the mixture evenly into six 1/2-cup custard cups or ramekins. Sprinkle with marshmallows. Enjoy warm or chilled.
