Chocolate rum & raisin cheesecake

Indulgent Christmas cheesecake with fruity and chocolatey flavors.
Ingredients:
  • 80ml (1⁄3 cup) dark rum
  • 265g (11⁄2 cups) Raisins
  • 170g plain chocolate biscuits
  • 55g (1⁄2 cup) almond meal
  • 80g butter, melted
  • 9.00 gm powdered gelatine
  • 500g cream cheese, at room temperature
  • 60g (1⁄3 cup) icing sugar mixture, sifted
  • 200g dark cooking chocolate, melted, cooled slightly
  • 600ml ctn thickened cream, whipped
  • 100g dark cooking chocolate, extra, chopped
  • 80ml (1⁄3 cup) thickened cream, extra
  • Giant chocolate stars and chocolate curls, to decorate
  • Fresh cherries, to decorate
Instructions:
  • Allow the rum and 170g (1 cup) raisins to mingle in a bowl. Let them soak for 30 minutes.
  • Grease a 20cm round springform cake pan and line with baking paper. Crush the biscuits until coarse. Mix with almond meal and melted butter until combined. Press mixture evenly into the pan. Chill in the fridge for 30 minutes.
  • In a small microwave-safe bowl, combine 2 tablespoons of cold water with gelatine. Let it sit for 5 minutes.
  • Strain the raisins and keep the rum. Combine cream cheese, powdered sugar, and reserved rum in a bowl, using electric beaters until smooth. Microwave the gelatine mixture on High for 30 seconds until dissolved, then let it cool for 2 minutes. Add it to the cream cheese mixture and mix well. Incorporate melted chocolate, then gently fold in a quarter of the whipped cream, followed by another quarter, and finally, fold in the soaked raisins.
  • Pour the luscious chocolate mixture onto the biscuit base, ensuring a silky smooth finish. Chill in the fridge for a minimum of 4 hours until perfectly set.
  • Place the additional chocolate in a heatproof bowl. Warm the cream in a small saucepan over low heat until it almost boils. Pour over the chocolate and let sit for 5 minutes until it melts. Stir until smooth. Allow to cool slightly.
  • Place the cheesecake on a serving plate and generously spread the remaining whipped cream on top. Garnish with stars, chocolate curls, the rest of the raisins, and fresh cherries. Finish by drizzling the chocolate mixture over the top. Enjoy!
