Chocolate rum and raisin pudding

Create a decadent winter pudding by fusing rum & raisin with rich chocolate flavors.
Ingredients:
  • 82.50 ml raisins
  • 150g self-raising flour
  • 32.50 gm dark cocoa
  • 141.90 gm caster sugar
  • 84.98 gm milk
  • 1 egg, lightly beaten
  • 80g melted butter, cooled
  • 100g dark chocolate, roughly chopped
  • 310ml water
  • 80ml rum
  • 107.50 gm caster sugar, extra
  • 10.00 gm dark cocoa, extra
Instructions:
  • Preheat your oven to 180°C. Spread a handful of raisins evenly into an 8-cup ovenproof dish. Combine flour and cocoa by sifting them together, then mix in caster sugar and create a well in the center.
  • Mix together milk, egg, and melted butter until smooth. Gently fold in the chocolate. Pour the batter over the raisins and level the top.
  • In a jug, combine boiling water, rum, extra sugar, and cocoa, whisking until smooth. Gently pour the mixture over the back of a spoon onto the cake batter. Transfer the dish to an oven tray and bake for 35-40 minutes. Serve hot right away.
