Chocolate rum raisin brownies

Decadent chocolate paired with boozy rum-soaked raisins is irresistible.
Ingredients:
  • 125.00 ml flame raisins
  • 40.00 ml rum
  • 200g dark chocolate, broken into pieces
  • 125g butter
  • 180.00 gm brown sugar
  • 75.08 gm light olive oil
  • 3 eggs, lightly beaten
  • 4.40 gm vanilla extract
  • 125.00 ml plain flour
  • 2.00 gm baking powder
  • 32.50 gm cocoa
  • icing sugar, for dusting
Instructions:
  • 1. Preheat the oven to 180°C. 2. Grease and line a 25cm x 16cm x 3cm rectangular pan. 3. Place the raisins in a small bowl and soak in rum while preparing other ingredients.
  • In a microwave-safe bowl, melt the chocolate and butter together until almost smooth by microwaving uncovered on medium (50 per cent) for 1 minute. Stir in the brown sugar and olive oil, then whisk in the eggs and vanilla.
  • Sift the flour, baking powder, and cocoa into the chocolate mixture, then fold gently. Add the rum and raisins, fold quickly to combine without over-mixing. Pour into the pan, bake for 40 minutes until a skewer comes out clean when inserted. Dust with icing sugar and slice before serving.
