Chocolate rum fruit puddings

Get into the holiday spirit with these adorable chocolate rum puddings, perfect for Christmas celebrations.
Ingredients:
  • 250.00 ml mixed dried fruit
  • 62.50 ml dark rum
  • 150g good-quality dark chocolate, chopped
  • 125g butter, chopped
  • 3 eggs
  • 59.40 gm firmly-packed brown sugar
  • 82.50 ml plain flour, sifted
  • 37.50 gm self-raising flour, sifted
  • 10.00 gm cocoa powder, sifted
  • Extra cocoa powder, to serve
  • Vanilla ice-cream, to serve
Instructions:
  • In a bowl, mix the dried fruit with rum and let it sit at room temperature for 1 hour.
  • 1. Preheat your oven to 180°C. 2. Lightly grease a 6-hole, 3/4 cup-capacity, non-stick Texas muffin pan. 3. In a heatproof, microwave-safe bowl, combine chocolate and butter. 4. Microwave on high (100%) for 1 to 2 minutes, stirring occasionally with a metal spoon until melted and smooth.
  • With an electric mixer, whip eggs and sugar until they become thick and creamy. Incorporate the chocolate mixture and mix well. Gently fold in the flours, cocoa, and dried fruit mixture until just combined.
  • Fill muffin holes three-quarters full with the mixture. Bake for 18 to 20 minutes or until a skewer inserted in the centre comes out with moist crumbs. Sprinkle with cocoa and enjoy with vanilla ice cream.
