Make homemade rum & orange chocolate balls for a unique and delicious gift idea.
Ingredients:
  • 100g pitted prunes, roughly chopped
  • 80ml (1/3 cup) dark or white rum
  • 250g dark chocolate (70% cocoa solids), chopped
  • 125g unsalted butter, chopped
  • 250g scotch finger biscuits, halved
  • 80g roasted peeled hazelnuts
  • 1 orange, zested
  • 50g flaked almonds, roasted, finely chopped
  • Cocoa, to dust
Instructions:
  • In a small saucepan over low heat, simmer prunes and rum until boiling. Remove from heat and set aside for later use.
  • Fill a saucepan one-third full with water and bring to a gentle simmer. Place the chocolate and butter in a heatproof bowl set over the pan of simmering water, stirring until melted without letting the bowl touch the water.
  • Pulse biscuits, hazelnuts, and prunes in a food processor until finely chopped. Add orange zest and chocolate, pulse until mixed. Transfer mixture to a bowl and chill for 15 minutes until firm.
  • Prepare a large tray lined with baking paper. Place almonds in one shallow bowl and cocoa in another. Quickly roll the chocolate mixture into 3cm balls using your hands and place them on the tray. Coat half of the balls with almonds and dust the remaining half with cocoa. Keep the truffles in the fridge in an airtight container.
