Indulge in festive chocolate rum balls with a fruity twist.
Ingredients:
  • 1/2 x 800g dark fruit cake, chopped
  • 62.50 ml dark rum
  • 62.50 ml dried cranberries, chopped
  • 2 x 180g blocks dark chocolate, melted
  • 127.50 gm desiccated coconut
  • 125.00 ml chocolate sprinkles
Instructions:
  • Break the fruit cake into a bowl. Pour in the rum and stir until mixed. Add cranberries, chocolate, and 1/2 cup of coconut. Stir until everything is combined.
  • Shape 1 level tablespoon of fruit cake mixture into a ball, coat with coconut, and place on a baking paper-lined tray. Repeat with the rest of the fruit cake mixture, half coated in coconut and the rest in chocolate sprinkles. Chill the balls for 2 hours until firm. Serve and enjoy!
